True to Japanese and Asian style, our knives are low in weight for delicacy in execution. The 17 degree angle, tighter than that of German knives, allows you to glide through ingredients with ease. Higher carbon levels allow for easy sharpening and more precise edges.

7" boning knife

From breaking down chickens to butchering sides of beef this boning knife is your specialized go to. The octagonal handle that is great in all our knives but it truly shines here, allowing the knife to be comfortable in any cutting position. The grip holds up for those slippery situations. 

For this blade we take our steel and treat it 2 HRC lower with a slightly altered cooling process to increase the blades flexibility while avoiding a risk of chipping. 

The VG10 steel is more resilient than carbon steel, yet it sharpens with ease, allowing a finer edge. The durability of VG 10 steel prevents dulling and rusting. The "kurouchi", or blacksmith finish, is the signature of our forge in Southeast China. The carbon laminated surface helps you glide through cuts of meat with efficiency.

A staple blade of American Chefs and in American kitchens, this paring knife took months of development, fusing our classic FTT styles with the craftsmanship and tradition of our Forge and the needs of a great paring knife.

Paring knives are perfect for small precise prep and delicate work. From peeling vegetables to dicing fruit, the 3.5 inch blade gives you tons of control with enough room to work medium tasks. With the razor sharp edge of all our knives on this small blade, you have laser like control for garnishes. 

The VG10 steel is more resilient than full carbon steel, yet it sharpens with ease, allowing a finer edge. The durability of VG10 sgteel prevents dulling and rusting.

The "kurouchi", or blacksmith finish, is the signature of our forge in Southeast China. By laminating the blade in carbon it protects the core steel from the elements and adds the stunning look.
